A Peek at my Week – Take Two

I had so much fun posting my first weekly shopping list a few weeks back that I thought I would do it again. This time however I thought I would add the list of menu items for breakfast, lunch and dinner even though I risk exposing my son’s less than stellar lunch choices, lol. In his defense I will add that it is my fault for asking him what he would like; when he chose breakfast options I wasn’t up for arguing. Not to say that he is eating veggie-packed lunches on other weeks; in our house I save the veggie-push for supper time. He is usually quite accepting of whatever we are having for supper although I will make him a modified version if I know he will not like the particular sauce etcetera that I am using. Typically his lunches rotate between the following options: tomato soup with whole wheat macaroni, Wow butter and jam rolls, homemade alfaghetti, “meaty” spaghetti sauce with pasta, veggie chick’n nuggets, vegan pepperoni & cheese pizza and veggie hot dogs – typical kid food, just veganized. His snacks pretty much stay the same as those listed below but sometimes we mix it up with plain Goldfish crackers, air popped popcorn drizzled with vegan margarine, ground rice pudding with blueberries, canned mandarins/peaches/fruit salad with extra cherries in fruit juice and those little Sun Rype fruit pieces. And of course, as you will see, this week is a bit of a Mexican theme in the Desjardins house as we indulge in nachos, tacos and burritos. Like I said in my first shopping list post, this list is not edited to make me look like a vegan Martha Stewart, it is just a random list based on what I felt like making and eating this week. Some weeks are full of suppers that are rice-based, or pasta-based, Indian-themed meals, veganized “fast” foods, comfort foods – whatever takes my fancy. Versatility and variety are key to keeping me interested, challenged and satisfied, intellectually and in the kitchen. I hope that in sharing these lists and menus, you are inspired and encouraged: vegan meals and meal-planning can be realistic, attainable and affordable, whatever your budget and taste buds!
