Ever since I was introduced to the simplest, homemade chocolate peanut butter nice cream I have been addicted to this versatile sweet treat. Change the type, flavor or combination of non-dairy milks (coconut, soy and soy creamers, almond, oat, rice; chocolate, strawberry, vanilla) and the amount of milk to make either a smoothie or a nice cream. Change the fruit according to your preference or whatever is on hand. Keep it simple with only three ingredients -bananas, fruit and non-dairy milk – or create your very own plant-strong super-food by adding any of the following: natural peanut, almond or other nut butter, cocoa powder, ground flaxseed, hemp hearts, spinach, baby kale, ginger, fresh squeezed juice, Spirulina powder, Vega Berry Bodacious protein powder or chia seeds. Add in your own finds and you will have your very own personalized breakfast smoothie, post workout pick me up, nice cream dessert or summertime snack – actually, you really don’t need a reason to indulge, just an appetite and a spoon (or a wide straw!). Super Healthy Cherry Chip Nice Cream
makes 3-4 servings
- 1-1/2 ripe bananas, peeled, chopped & frozen
- 300g dark sweet cherries, frozen
- 1 frozen spinach cube
- 1 tablespoon ground flaxseed
- 1/3 cup vegan semi-sweet chocolate chips (optional)
- Unsweetened soy milk, approximately 3/4 cup, just enough to make mix process
Place all ingredients in blender and process until completely smooth, taking time to scrape down the sides as needed. This will take some time if you want the nice cream to be thick and completely blended but if you prefer a smoothie, just add more milk. Serve, share & enjoy!!
