I was going to start this off by saying that when I am at the computer typing I am usually feeling snack-ish … but seriously, who am I kidding, I am ALWAYS in the mood for a snack, lol. So, in honor of our “me-now” culture, I thought I would post something about what I’m snacking on tonight. Is this the most brilliant foodie idea floating around the internet? Most likely not (hahaha) but in a day and age where people “check-in” to whatever venue they are at, I thought I’d add my two cents in and post a pic of what I am munching on while trying to think up ways to be clever and engaging on my blog. 🙂
Tonight’s snack was inspired by a soup I was making (Chile-Lime Tortilla Soup) that is garnished with oven-baked tortilla strips. After sampling one of those crunchy strips I decided I was feeling a bit peckish so I took toasted a 9-inch Ancient Grains tortilla in the oven and topped it with St. Dalfour’s raspberry jam (no sugar added, just fruit juice concentrate). And voila: Crispy Raspberry Jam Tortilla, a nice, light, crispy, sweet snack.
